I was recently tasked with showcasing some of my favorite Christmas cookies for the Military Moms Blog. I linked up several tried and trued recipes from the recipe boxes of food bloggers around the web, but my absolute favorite cookie left me without a link… because it’s my own creation.
So, because I love you, and because I need a copy of this recipe to share, I give you: Everything Christmas Cookies. Also known as Oatmeal Raisin Apple Cinnamon White Chocolate Chip Cranberry Cookies.
This recipe is amazing because it is so dang versatile. The base recipe produces the softest, yummiest chocolate chip cookies. And oatmeal raisin cookies. And any other add-ins that you like. The combination of butter and Country Crock produces a perfect consistency- not too chewy, not too cakey. The pudding keeps the cookies super moist for days (if your cookies actually last that long!).
So, here we go!
Everything Christmas Cookies
*2 eggs
*3/4 c brown sugar
*1 tsp vanilla
*1 box (3 oz) instant vanilla or French vanilla pudding mix
*1 stick butter
*1/2 c Country Crock
*1/4 c white sugar
*1 tsp baking soda
Mix above ingredients until light and fluffy. Then stir in:
*1-1/4 c flour
*2-1/2 c instant oats
*1/2 c raisins
*1/2 c dried cranberries
*1/2 c white chocolate chips
*1/2 c chopped apple or apple pie filling
*1/2 tsp cinnamon
Place by the spoonful on greased cookie sheet. Bake at 350* for 10-12 min.
Variations
As I mentioned above, you can make so many other kinds of cookies from this simple base recipe.
To make simple Oatmeal Raisin cookies, follow the above recipe but omit all the extra add-ins.
To make Chocolate Chip cookies, use 3 c flour, 1 small bag of chocolate chips, and omit the other add-ins.
To make Everything Autumn cookies, I make this recipe and also throw in 1/2 c canned pumpkin. As my niece once told me after eating an Everything Autumn cookie, “This tastes like childhood!”
